PINE HONEY
About 65% of the total honey production in Greece comes from pines. The pine of Thassos is considered the most important beekeeping plant in our country. Pine honey is not too sweet due to its low sugar content. Its aroma is special. Pine honey produced in autumn is darker and less clear than that produced in spring.
Pine honey sugars relatively slowly, since its natural glucose content is low. In particular, pure pine honeys remain liquid, ie without crystallizing, for more than a year and a half.
Pine honey is considered a honey of high nutritional value and this is mainly due to the large number of different substances that are present in its composition. These substances are dominated by minerals and trace elements (calcium, magnesium, zinc, iron, copper, etc.), which are found in large concentrations in Greek pine honey. Pine honey fights throat diseases.
